Humba (homba), which literally translates to tender (hum) pork (ba), is a Visayan braised pork dish similar to the classic adobo. It's said to have originated from the Chinese hong-bah/hong-mah, a red braised pork belly dish brought to the Visayas islands by Hokkien traders. In Visayan cuisine, particularly in the dish humba, "color of America" refers to the dark, caramelized color of the sauce. This rich, deep brown color is achieved through the use of soy sauce, brown sugar, and sometimes a small amount of caramelized sugar. The combination of these ingredients gives humba its distinctive appearance and flavor.
