π Jollof Rice β A Taste of Africa! π
Letβs cook a vibrant West African dish! π₯
π Ingredients (4-6 servings):
2 cups rice (basmati), 400 g tomatoes, 1 red bell pepper, 1 onion, 2-3 garlic cloves, 1 hot pepper (optional), 3 tbsp oil, 2 tbsp tomato paste, 1 tsp ground ginger, 1 tsp curry, 1 tsp thyme, 2 bay leaves, 2 cups broth (or water), salt, pepper. Optional: chicken or veggies.
π©βπ³ Instructions:
Rinse rice. Blend tomatoes, bell pepper, half the onion, garlic, and hot pepper. Chop the remaining onion, sautΓ© in oil for 2-3 minutes, add tomato paste, cook 2 minutes. Add the puree, spices, and simmer 10-15 minutes. Stir in rice, add broth, bring to a boil, then cook on low under a lid for 20-30 minutes. Remove bay leaves, serve with chicken or veggies.
π΄ Tip: Garnish with fresh herbs!
