🌍 Jollof Rice β€” A Taste of Africa! 🍚 Let’s cook a vibrant West African dish! πŸ”₯ πŸ“‹ Ingredients (4-6 servings): 2 cups rice (basmati), 400 g tomatoes, 1 red bell pepper, 1 onion, 2-3 garlic cloves, 1 hot pepper (optional), 3 tbsp oil, 2 tbsp tomato paste, 1 tsp ground ginger, 1 tsp curry, 1 tsp thyme, 2 bay leaves, 2 cups broth (or water), salt, pepper. Optional: chicken or veggies. πŸ‘©β€πŸ³ Instructions: Rinse rice. Blend tomatoes, bell pepper, half the onion, garlic, and hot pepper. Chop the remaining onion, sautΓ© in oil for 2-3 minutes, add tomato paste, cook 2 minutes. Add the puree, spices, and simmer 10-15 minutes.
