The production process of matcha includes:
Shading: In the last 2-3 weeks before harvesting, the tea plants are shaded, promoting the production of chlorophyll in the leaves, giving the tea leaves a rich green color.
Selecting tender leaves: Only the youngest and most tender tea leaf buds are picked.
Steaming: The tea leaves are steamed immediately after harvesting to preserve their nutrients.
Grinding: The dried tea leaves are then ground into a fine, powdery matcha.
These specialized production steps give matcha its unique aroma, color, and texture, which are distinct from regular green tea.
