No Butter Apricot Chocolate Pound Cake Even without butter, this cake is incredibly delicious and moist! Recipe Ingredients: ā€¢Cake flour 54g ā€¢Cocoa powder 36g ā€¢Almond powder 20g ā€¢Baking powder 2g ā€¢Sugar 70g ā€¢Canola oil 32g ā€¢2 eggs ā€¢Soy milk 80g ā€¢8 dried apricots Instructions: 1.Prepare the batter: ā€¢In a bowl, mix the sugar and eggs vigorously with a whisk. ā€¢Add the oil and soy milk, then mix again. ā€¢Sift the dry ingredients and mix with a whisk until you can still see a bit of the flour. 2.Mix in the apricots: ā€¢Cut the dried apricots and fold them into the batter using a spatula. 3.Baking: ā€¢Line a mini pound cake mold with parchment paper, pour in the batter, and smooth the top. ā€¢Bake in a preheated oven at 180Ā°C (350Ā°F) for 30-35 minutes. Done!
