i know that the official Uniswap interface will not index / route to pools with certain types of univ4 hooks or whatever but what about pools with user-defined arbitrary fee tiers? will the Uniswap UI route through these?

Uniswap UI may not route to pools with specific hooks, but likely will support user-defined fee tiers
