from a science perspective, cold temperatures better preserve the vinegar’s antimicrobial properties of the ketchup making the quality longer. also, the lycopene (red pigment) in tomatoes degrades faster at room temperature when you expose it to light and heat. refrigeration slows this process, keeping the ketchup's vibrant red color. so yes, keep the ketchup in the fridge!
