Instructions

- boil water, salt it
- separate broccoli heads from stalks
- cut stalks lengthwise
- slice garlic & chill
- sautee garlic & chilli in some oil on high
- before the garlic yellows, throw in the (washed) broccoli 
- add a ladleful of cooking water and cover with a lid (this will steam the broccoli in the pan)
- keep an eye on it and add water when it's gone
- drain the pasta 2 minutes before cooking time; DO NOT throw away the cooking water
- add pasta, lemon juice, parmesan and cooking water to broccoli
- toss it like your life depends on it, remove from cooker
- lay a bed of the broccoli on the dish
- use a carving fork to plate the pasta
- add more parm, dash of oil, Maldon salt
