Carrots, Bibb lettuce and rhubarb. Never had green rhubarb before, heard it was better than red. Is that true?

I have only ever had the red variety. And only baked in a pie. What other meals with rhubarb have you had or heard of?

I’ve just made sweets, pies, cobblers and jams. I’ve got a ton growing, any ideas what I should try? I’ve frozen store bought and it freezes well, that may be my backup.

Here's one of my favorite salad recipes, since it's summer and not ideal for baking: --==Couscous Feta Salad==-- Mustard Dressing: 1 teaspoon salt ½ teaspoon ground pepper 2 tablespoons red wine vinegar 1 ½ tablespoons dijon mustard ½ cup olive oil Combine dressing ingredients and set aside. Salad: 4 cups cooked couscous, fluffed 4 ounces Feta cheese, crumbled ½ cup chopped parsley 1 medium cucumber, peeled, seeded and chopped 6 green onions, chopped ¼ cup pine nuts, toasted 1 tomato, seeded and chopped Place salad ingredients in a large bowl and toss with prepared dressing. Refrigerate to chill before serving.
