Unlike regular white rice, Ofada rice retains its bran, giving it a brownish or speckled appearance with a chewy texture. It has a distinct, earthy flavor and is often served with a spicy sauce called Ayamase (Ofada stew), made from green peppers, assorted meats, and palm oil.
