Early societies became successful because of food production and preservation techniques. Our guts evolved to eat foods preserved with natural ingredients (mainly salt) This year I've been exploring home pickling. Solid results so far (sauerkraut & kimchi were delicious!) After raiding my in-laws' lemon stash, today I'm pickling lemons - loosely based on a Moroccan recipe We'll find out if it's tasty next month!
