Pickles

- can make a variety of flavors/types 
- oftentimes the cucumbers required are “rejects” so the production can be considered cyclical for food recovery
- they’re delicious

a quality organic pickle brand that sells all kinds of pickled/fermented vegetables would be 10/10. ideally you get them in a set of pint jars.

"banchan"/"tapas" are a great concept that you could sell into other cuisines too
