I've seen Coinbase commerce being recommended before (I think that's correct). No personal experience I'm afraid., though. I think it depends to a certain extent where you are located.

USA. How does CB commerce translate to brick and mortar retail?

I'm not sure, I'm afraid. https://www.coinbase.com/en-es/commerce Looks like it converts clients currency payment of choice into USDC and also says - Hundreds of currencies, multiple wallets. Customers can pay with their preferred wallet and currency across Base, Ethereum, and Polygon. 
You'll have to dig a little deeper, though.

Right, like I want to accept and receive stablecoins on multiple networks. How, as a small business owner am I expected to do that?
