I still feel like a white-glove reservation concierge service would crush in NYC: clients pay monthly for x reservations per month, can specify days and times they prefer, send new restaurants they want to go to or rely on the expertise of the concierge

Not really, you can reach out to them with a request but it's kinda a hassle (you have to call, used to be able to email) and each request is a one-off rather than a recurring thing
