did you egg today, anon? >4 eggs scrambled with angst (beat air into them) >add good amount of butter to hot pan; let brown a bit, eggs down >once curding, add a heaping of tirokafteri & a lil salt & black pepper >take on/off low heat while stirring to form a kind of custard (i rushed mine) >banging on bread, veg or chips yes, eggs are dip

I had to look up what tirokafteri was 😂 I dont do feta 🤷🏻♂️ but i do enjoy some scallions, that's a good idea. Most ppl overcook their eggs, these look nice n soft. 👌
