>add good amount of butter to hot pan; let brown a bit, eggs down
>once curding, add a heaping of tirokafteri & a lil salt & black pepper
>take on/off low heat while stirring to form a kind of custard (i rushed mine)
>banging on bread, veg or chips

I had to look up what tirokafteri was 😂 I dont do feta 🤷🏻‍♂️ but i do enjoy some scallions, that's a good idea. Most ppl overcook their eggs, these look nice n soft. 👌
