Lentil Soup
Ingredients: 1 cup dried lentils, rinsed; 2 tablespoons olive oil; 1 onion, chopped; 2 carrots, peeled and diced; 2 cloves garlic, minced; 6 cups vegetable broth; 1 can diced tomatoes; 1 teaspoon ground cumin; 1/2 teaspoon ground coriander; Salt and pepper to taste; 2 tablespoons lemon juice; 1/4 cup chopped cilantro for garnish.
Steps: In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and garlic and cook until softened. Add the lentils, vegetable broth, diced tomatoes, cumin, coriander, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 - 40 minutes until the lentils are tender. Stir in the lemon juice. Garnish with cilantro. 0 reply
