Was thinking about Steve Ells and his story of how he got started: Steve Ells used to be a Michelin star chef at Star in San Francisco in the 90s - and then he moved back to Denver. He wanted to open a high dining / Michelin star concept restaurant in Denver, but he doesn’t have the cash. So he decides to do a SF mission style fast dining burrito place, and it blows up. It blows up so much it takes up his whole life - the burrito place was called Chipotle
