Former drum guy, now firmly in team flat. Drum has more cartilage at the top and is various thicknesses, so the top of the drum can be comparatively overcooked compared to the bottom. The flat is consistent, and the meat tends to be more evenly cooked. Plus, you get to bust that shit open.
