Cake size: 27 cm diameter β€’ 1 kg of cottage cheese for cheesecake, ground β€’ 400 g of mascarpone cheese β€’ 200 g of cream cheese (e.g., Philadelphia) β€’ 400 g of Lotus crunchy spread β€’ 2 packs of Lotus biscuits for the base β€’ 1 pack of butter cookies for the base β€’ 120 g of butter (you can substitute butter with water, about 50-80 ml) Base Crush the biscuits and cookies into crumbs (I used a blender) and add the melted butter. Mix well. Spread the mixture onto a baking tray lined with parchment paper and level it out. Arrange whole or halved biscuits around the edge of the tray. Put the base in the fridge for 30 minutes. Filling In a large bowl, combine the cottage cheese, cream cheeses, and Lotus spread (set aside 4 tablespoons for the topping). Blend everything until smooth. Spread the mixture over the biscuit base. Keep in the fridge. Topping Melt a few tablespoons of Lotus spread in a pot and, once it cools (the topping can't be hot), pour it over the top of the filling. Enjoy!
