Is there an open-source repo that has the code places like DeBank and Zapper user to calculate all of these DeFi projects Farming, LP, and Staking rewards from onchain data?

I believe each is a bespoke-ish build out and the closest thing would be hoping that a vault implements the yield vault EIP

This makes me cry, but I guess this is the way

Yeah, the state of the ecosystem right now. Some protocols offer SDKs but it will only get you so far and can lead to a ton of bloat, especially if you are just making smart contract calls.

Yeah, I've reverse engineered about 7 protocols right now so I guess I just need to keep going. At least things like Uniswap, Sushi, Liquity, Aave, and some of these other larger protocols are open and pretty well used so I can reverse engineer them.
