Fun fact: McDonalds in the Middle East sells chai made in this fashion. It’s called “kadak” which literally means “stiff” or “hard” in some Indian languages and is often used in India as an adjective to describe the tea that has the deep caramel color and flavor, https://youtu.be/YxLm0jmazq8

I was thinking “kettle” when I wrote “pot”. This video does a good job of showing the process: https://youtu.be/8fQAxZahx_U Main thing is that the spices and tea should be boiled in the water for a while. The video also shows the deep caramel color that my family prefers.

Morning chai ☕️. When traveling, I carry an collapsible electric pot to brew chai by boiling tea, sugar, spices, milk and water. Also, many desi folk have their own recipe to make microwave chai that they’ve perfected. You’ll find a crowd discussing the best way to do it in any office kitchen at 4 PM.

As a Washingtonian, I miss 2. Wherever I meet someone in Seattle on a 🌞 day, I take them out to see the Sun as if it’s a local landmark… depending on where they’re from, they may find it a bit crazy.
