No Butter Apricot Chocolate Pound Cake Even without butter, this cake is incredibly delicious and moist! Recipe Ingredients: •Cake flour 54g •Cocoa powder 36g •Almond powder 20g •Baking powder 2g •Sugar 70g •Canola oil 32g •2 eggs •Soy milk 80g •8 dried apricots Instructions: 1.Prepare the batter: •In a bowl, mix the sugar and eggs vigorously with a whisk. •Add the oil and soy milk, then mix again. •Sift the dry ingredients and mix with a whisk until you can still see a bit of the flour. 2.Mix in the apricots: •Cut the dried apricots and fold them into the batter using a spatula. 3.Baking: •Line a mini pound cake mold with parchment paper, pour in the batter, and smooth the top. •Bake in a preheated oven at 180°C (350°F) for 30-35 minutes. Done!
