Hereโ€™s a simple and quick recipe for a Lenten dish โ€” potato pancakes with mushrooms. Take 4 medium potatoes, grate them on a coarse grater, add 2 tablespoons of flour (rice or wheat works), a pinch of salt, and a bit of black pepper to taste. Mix until smooth. Then take 200 grams of champignons (or any mushrooms), chop them finely, and fry them in 2-3 tablespoons of vegetable oil with one finely chopped onion until golden โ€” about 7 minutes. Add the mushroom mixture to the potato batter and mix well. Heat a skillet with a little oil, spoon the batter in to form small pancakes, and fry for 3-4 minutes on each side until golden brown.
