In 2020, a colleague convinced me to participate in Veganuary (a collective new year challenge where people try a vegan life for a month). I'm thankful that my wife was on board. It was easier than we expected. We learned a lot during that month. For example, I had previously underestimated the environmental impact of meat. So we continued past January until today...
