What are you all having for dinner tonight? Here’s my plan: I had too many yellow heirloom tomatoes from the garden and couldn’t eat another tomato sandwich so I’m making a simple soup! Roasted the tomatoes with onion and garlic for 30 minutes at 400 degrees. Added veg stock and puréed with a handheld immersion blender. Planning to add a little heavy cream and garnish with parsley, and will serve with some grilled cheese sandwiches.

Sounds perfect!! When I had an over supply from my garden, I roasted them and made pasta sauce and to this day I still think about it. It was the most flavourful sauce we’ve ever had.

For some reason I felt like I couldn’t eat yellow tomato sauce but tasting the soup I think I might have been wrong. It came out dee-lish. And I don’t have to feel guilty for letting food go to waste. :) Are you still in the midst of winter or is spring starting to appear?
