Sangak is a type of bread baked on a bed of pebbles or gravel in a flat oven. (Sangak: stone + diminutive k: small and fine stone). This type of bread is from Iran and is an evolution of nomadic bread that was baked on fire and stone and was called kemaj. In the early Pahlavi period, it was one of the most common breads in Iran. Sangak bread was previously the bread of the aristocracy and military. In the past, in some cities, Sangakis were seasonal bakeries, mostly baking in winter and during Ramadan.
