a token gated app and one that requires a paid subscription to log in and use it is somehow different to apple...

Basically, it's the app stores policy that any app should be usable by any user. If you need a paid subscription to be able to use it, then a user that does not already have a subscription should be able to buy one via IAP. Until IAP allows token purchase, I don't see this changing.
