"c" is pronounces "ts" in Esperanto, so it needs a "c" to keep the pronunciation. And "o" at the end is mandatory for nouns.

So it's a maximally faithful transliteration given the language's properties and constraints.

Interesting. In Lithuanian, pizza is "Pica". Don't have a good explanation why, though closeness to Sanskrit may be a reason somehow
