Used to not like them and then came around to them via golden beets... Now I'm a fan generally, especially in salads or with some vinegar or citrus-based dressing

Lets go 😋 citrus dressing you say, have never tried that. Ty! 
Also I love golden beets, there one of my favorites. I grow a white one thats even milder than the yellow

I like making a vinaigrette with lemon juice, olive oil, red wine vinegar and maybe a touch of balsamic vinegar, but you can sub any citrus or other vinegar for wildly different and delicious dressings e.g. lime and rice vinegar, or add ginger or garlic for different zing!

My go to is basalmic,  but i am open to all vinagers
