Add 1.25 cups of water, bring to a boil over medium heat, then reduce to low, cover with a lid, and cook for 12-15 minutes until the water is fully absorbed. Don’t lift the lid during cooking! Afterward, let the rice sit for 10 minutes. For the seasoning, mix 2 tbsp rice vinegar, 1 tbsp sugar, and 1 tsp salt, warm it slightly until dissolved, and gently fold it into the warm rice.
