i’ve worked a ton of blue collar jobs in my day; from running overnight janitorial shifts in nyc public schools, to waste management, to doing nearly everything there is re construction & landscaping, to pool cleaning, to washing dishes & being a line cook & without a doubt, the nastiest shit i’ve ever done was clean restaurant kitchens & bar mats—absolutely foul, worse than septic if some of you saw what real kitchens look like, you’d never eat out again

My favorite Chinese restaurant is a teenager got shut down by inspection that discovered they were storing their meat in open buckets on the stairs to the basement

this is so normal lol except usually in a walk-in fridge but eveything else — 5 gallon buckets, open — checks out
