Instructions: 1. Roasting the Eggplants: Roast the eggplants over an open flame or in the oven until the skin is completely charred and they develop a smoky aroma. Then, peel and mash them. 2. Sautéing the Garlic: Finely chop the garlic and sauté it in oil until it turns slightly golden. 3. Adding the Eggplant and Tomatoes: Add the mashed eggplant to the garlic and sauté for a bit. Then, add grated tomatoes and let the mixture cook until most of the liquid evaporates. 4. Seasoning: Add salt, pepper, and turmeric, and mix well to combine all the ingredients. 5. Adding the Eggs: Crack the eggs directly into the mixture and stir until fully incorporated. (Some people prefer to leave the eggs whole and cook them sunny-side up on top of the dish.) 6. Final Cooking: Let the mixture cook on low heat for a few minutes until the eggs set.
