I don’t think they stole your logo. This NFT project existed and used the logo at least for two years. 

Also ō isn’t very special letter since placing a horizontal line over a consonant letter in the alphabet typically indicates a long sound of the consonant(e.g., "ō" in "Tōkyō" to represent a long "o" sound).
