I asked my 15 year old to help me make some kind of interesting dessert to bring to a family get together tomorrow, and they remembered I had mentioned baking pies inside cakes in the past. They asked if we could do a tart lemon bar inside a sweet vanilla and raspberry cake with frosting. It's going to be a challenge but I'm going to try it and see how it goes! Wish me luck lol! Will post pics tomorrow.

Okay here's the first try. I figure it'll take a couple iterations to get it right.
Lemon bar with fresh lemons inside a raspberry cake with fresh raspberries, topped with whipped butter frosting both plain and with powdered freeze dried raspberries, topped with lemon zest.
Thoughts: tastes amazing. The lemon bar had light brown and coconut sugar, next time I'll do white sugar to get the classic yellow color. The shortbread was too thick and lemon too thin. Cake a bit dense. Delicious and beautiful though!
