Is there any way to easily fork the current zkSync's state and serve the fork via rpc, ie something like `anvil --fork-url ...`? Local tools more favourable compared to services obv ;)

Guess `era_test_node fork mainnet` it is, see https://docs.zksync.io/build/test-and-debug/era-test-node.html#forking-networks 🙏

If you're asking for debugging locally, then yes the In memory node is the way to go
