Day 6/30: Chicken Fajitas Chicken Fajitas recipe is an easy, very healthy, and delicious weeknight meal. It can be served with your favourite tortillas and homemade salsa. Ingredients: 2 pounds chicken breasts (sliced into very thin 1 to 1.5” long strips) 2 Tablespoons lime juice 2 Tablespoons olive oil 1 Tablespoon minced garlic ½ teaspoon ground cumin Species (chilli powder..) Tortillas Bell peppers Onions Instructions: 1. Marinate the chicken: whisk lime juice, olive oil and minced garlic in a medium bowl. Add the chicken and refrigerate for 10-15 minutes. 2. Heat large skillet over medium-high heat 3. Cook chicken: Remove chicken from marinade, cook 5-6 minutes per side. 4. Cook vegetables: Add onions and bell peppers, cook 5 minutes 5. Add cooked chicken to vegetables 6. Wrap tortillas in a dark paper towel, microwave 20-30 seconds. 7.
