Day 4/30 : Breakfast Burrito
Today's recipe is Breakfast Burrito.
Burritos are one of my favourite foods and it’s fun to enjoy them for breakfast! These burritos are super easy to make!
Ingredients:
1 pound fresh chorizo sausage, casings removed
1 tablespoon oil
1 pound potatoes, diced
1/4 teaspoon paprika
salt & pepper to taste
1 tablespoon butter
1/4 cup onion, diced
1 jalapeno pepper, finely diced
8 eggs, lightly beaten
salt and pepper to taste
4 large(12+ inch) flour tortillas
4 ounces cheese (such as cheddar or jack), sliced or shredded
1/2 cup salsa verde
Directions:
1. Cook the chorizo in a large pan over medium heat until cooked through.
2. Heat the oil in a large pan over medium heat, add potatoes, seasoned with paprika, salt, and pepper, and cook until golden brown on all sides.
3. Melt the butter in a large pan over medium heat, add the onions and jalapeno and cook until tender, about 5 minutes, before adding the eggs, seasoned with salt and pepper, and cooking, scrambled style.
