this is mole from Pujol in Mexico City It may look simple but it’s as complex as it gets. The dark mole has 20+ ingredients and its base has cooked for 10 years (sorta like a sourdough starter). The orange center is made of fresh fruits today. I literally cried with joy when I ate it. I
