6/6 Variability isn’t challenging…it’s annoying. It can unnecessarily put a hand on the scales.

Adding in a social component does that as well (in Catan, it is the “robber”). 

Yes, games like Terraforming Mars have attack cards as well - they just aren’t as frequent or impactful as the “robber”.

While I do enjoy chaos, TBH I don’t really find Catan to be that fun.
