Yeah, the tops were just getting so long, I was using the ones I get at Whole Foods as reference for the greens, but def need to go longer. I only pulled 3 and left the rest to grow for a while.

The food you get from the grocery is stunted and picked super early so they can ship it across the country. Yours should be legit x2-x5 the size of store bought when they are done :) You can’t overdue roots really, leave them as long as you possibly can they should be bulging way above the ground and the top parts will eventually stop growing but the bigger the better. You can trim if you need to that will only make bigger roots. They look great tho! Leave them until frost or if you don’t get frost then after that even
