When it says “vaulted at brinks,” this means the physical version of the card one mints is sincerely being held in a Brinks Vault? Does minting the digital version give ownership of the physical card?

Yes, that's exactly right! You can redeem the card and have it shipped to you or keep it vaulted and onchain.
