v2 is pretty old (May 2020). v3 had already been out for over two years when holesky was launched, so there wouldn't be much reason to deploy v2 contracts there. https://docs.uniswap.org/contracts/v2/reference/smart-contracts/v2-deployments

They have Sepolia, not Holesky. I have a lot of test eth on holesky and that's where we want to test our product.

My understanding is that, in general, Sepolia is for testing apps, Holesky is for testing protocol upgrades. You can use gas.zip to load up on Sepolia ETH. Or just deploy on Base or Polygon or something. Way more fun to deploy shoddy code on real money networksπŸ˜„ https://blog.chain.link/sepolia-vs-holesky-comparison/
