yeah they're pickled eggs so like a boiled egg preserved mostly in beet juice, sugar, and white vinegar-- it originates with the pennsylvania dutch basically a sweet and tangy egg that can last for month(s)

yes like sweet and sour, and with time it penetrates deeper i.e. the yolk has a little pink/purple to the outsides, another month it would be like half pink/purple not the recipe used: https://www.allrecipes.com/recipe/45157/quick-pickled-eggs-and-beets/
