Question: Is there some path down the future to abstract USDC out and support other tokens? (E.g. things more relevant in local economies outside of the US.) I suspect there would be, but part of me is afraid of getting too locked into a USDC-centric future.

yes! we are going to support every onchain asset - you can experience this today with commerce.coinbase.com. it just works with any ERC20
