Preheat the grill to medium-high heat. In a bowl, combine olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper. Add the shrimp to the bowl and toss until well-coated. Thread the shrimp onto skewers. Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and garnish with chopped parsley before serving.
