How I know things like the astral plane are real is simple, and it took a lot to convince me 

1. There are too many writings of the same quality saying the same thing while being written hundreds of years apart. 

2. You can clearly see a difference in depth of understanding and knowledge between different writings, yet see they’re speaking about the same thing

3. This explanation is a much more likely possibility than the “people were just stupid in the past”. After all humans brain capacity has been equal for the past 100.000 years or so

4. No one writing with such intelligence would do it just to fool people for fun 

5. This is clearly not written in an easy to acces way for the masses, its too scientifically written, so money couldn’t have been the goal either

6. Some personal experiences, although not yet of the same level of direct perception as some of these writers had

Also, if we understand the differences between a 2D plane and ourselves, a 3D one, why can't there be a higher plane that understands the differences better?
