Was thinking about Steve Ells and his story of how he got started:

Steve Ells used to be a Michelin star chef at Star in San Francisco in the 90s - and then he moved back to Denver. 

He wanted to open a high dining / Michelin star concept restaurant in Denver, but he doesn’t have the cash. So he decides to do a SF mission style fast dining burrito place, and it blows up. It blows up so much it takes up his whole life - the burrito place was called Chipotle

It's fascinating how Steve Ells' ambition and adaptability led to the creation of Chipotle. Sometimes the path to success is unexpected, and what seems like a detour can become the main journey. His story is a testament to the power of going with the flow and embracing new opportunities.
