You are correct that you need to run a node yourself if you want to ensure your content remains pinned. But this can be as simple as running the IPFS desktop app. Pinning services are for availability and production use. 

With Arweave, you are trusting that the network will: 

1. Exist forever
2. Keep your content
3. (most importantly) serve your content

Most people seem to forget about serving content. This is not free, not by a long shot. And thus, the economics of assuming your content will be freely retrievable forever with a one-time payment for storage don't make sense.

Like can I run a gateway and have it only storing data from my devices in the M3tering Protocol?

yes! you can definitely optimize your data to work with only data that you care about.

Ahh, I assume this means the gateways also have graphql subgraphs underneath. 🤔

But this neither covers how I could create a graphql subgraph of my own nor how to use an ar.io gateway in its stead. 

I would like to know how to set up my own gateway but only index and cache my applications data on it. Is there a like a filter config file that makes it possible to do that and what's the correct way to set it up while running a gateway locally?

need someone smarter than me to answer this 😅

instead of webhooks you woul duse ANS104_INDEX_FILTER and ANS104_UNBUNDLE_FILTER which tell a gateway what bundles to open, and what transactions in those bundles to index.
These will work for indexing specific content only from bundles (that can be uploaded through your ar.io gateway)
