Take 4-6 chicken thighs or breasts (about 800 g), 4-5 medium potatoes, 2 carrots, 1 large onion, 1 bell pepper (optional), 3-4 garlic cloves, 3 tablespoons of olive or vegetable oil, salt and black pepper to taste, 1 teaspoon of paprika, 1 teaspoon of dried herbs (rosemary, thyme, or oregano), and 1 lemon (optional). Rinse and pat the chicken dry, peel and cut the potatoes into wedges, carrots into rounds, onion into half-rings, bell pepper into strips, and chop the garlic or leave it whole. Mix the oil, salt, pepper, paprika, herbs, and juice of half a lemon, coat the chicken with this mixture, and let it sit for 15-20 minutes. Preheat the oven to 200°C, place the vegetables on a baking sheet, season with salt, pepper, and a drizzle of oil, then top with the marinated chicken and a few lemon slices, and bake for 40-50 minutes, checking after 20-25 minutes and flipping the chicken for even browning until the vegetables are soft and the chicken is golden.
