How many products are there where privacy is a core part of why it’s successful?

I’m leaving scale of “success” ambiguous so I get more answers.

Most promising onchain privacy protocols - what should I be looking at?

Anyone using The Graph in production? It all sounds great on paper, would love a qualitative take on how it works in practice.

The fact that on-chain activity is publicly visible is:
a. Convenient for personal use and important for third party verification. It's important that it remains standard.
b. An affront to personal privacy and security, and a hindrance to mass adoption. We need to solve this problem.
