Scenario. 

I go out to eat at a restaurant and order a diet coke with my meal. I also brought whiskey with me from home and poured it into my drink. Knowing I didn't want to pay the restaurant for their expensive mixed drink.

Question #1

Am I stealing from the restaurant?

What would the waiter think?

Am just gonna answer #2 since was a former server.  Think its tacky as fuq but then again I seen lot worse (leaving dirty diaper under the table).  End of the day long as ya not rude about it n not getting sloppy drunk its passable?  Maybe my bar for customer actions are now set way too low.

I'm sorry to hear that you have come across such disrespectful people. I agree that getting sloppy drunk is not good. And leaving a dirty diaper is pretty low. I've never heard of that one.  But I'm asking more on the financial side. 

I would assume if a customer isn't being disrespectful and not completely open about it, maybe a server wouldn't mind? And then a nice tip would prob make it a little easier to let pass.
